Oozing black fruit and the touch of silk velvet on the palate belies a noble quality worthy of royalty. THIS is why we grow Tempranillo.

Tasting Notes 
The 2012 Oak Ridge Vineyard has a seriousness and confidence in the nose. Much like a gracefully aging movie star from the 40's. Hints of white roses and gardenias, yet with an exotic mysteriousness of roasted ginger, nutmeg and cumin. Incredibly interesting and complex nose. The mouthfeel backs up the aromatic descriptors with even more power and confidence. Like a beautifully classic and complex perfume, filling the mouth with white flowers, exotic spices, and ripe fruits, kumquat and apricots. I love the texture of this wine. It has the classic girth and viscosity of Gewurtz, but it remains elegant and light on its feet, with wonderful balance and afresh lift on the finish.
Vintage Notes 
Situated on the eastern slopes of the White Salmon Valley at 1400 feet, this southern facing, sustainably farmed vineyard was planted in 1984. We are very excited to be sourcing this fruit from Oak Ridge. Made with sustainably grown grapes. Only 250 cases produced, enjoy! WINEMAKING NOTES The grapes were brought in and whole cluster pressed. The juice was settled out for a day or two before being racked off of the gross lees and into a small stainless steel fermentation tank. We prefer a prolonged cool fermentation with our white wines, and this is particularly important in capturing the complex volatile aromatics of Gewürztraminer. After fermentation was completed, the wine was gently moved off of the lees and fined for clarity before a final filtration prior to bottling.

Characteristic of its warm weather climate, the Porter & Plot Pinot Noir has a sunbaked raisin fruit flavor that's met by a blast of raspberry and a touch of black pepper. The finish is luxuriously long with an upfront kick of spice that flourishes into dense, dried fruit. This medium-bodied wine delivers a full mouthfeel that begs for a hearty, meaty dish to pair.
Vintage Notes 
The Plot: Halfway between the bustling cities of San Francisco and Los Angeles lies the beautiful rolling vineyards that make up San Luis Obispo County, and at it's heart, the sunny Edna Valley appellation. Grapes were first planted here by Spanish missionaries at the beginning of the 19th century, but it wasn't until the 1970s, amid the stunning scenery and the laidback lifestyle of the "SLO" domain, that a significant wine culture quietly emerged. Protected by the volcanic Santa Lucia mountains, Pinot Noir and Chardonnay grapes thrive to the forefront of the region's production. The Wine: Characteristic of its warm weather climate, the Porter & Plot Pinot Noir has a sunbaked raisin fruit flavor that's met by a blast of raspberry and a touch of black pepper. The finish is luxuriously long with an upfront kick of spice that flourishes into dense, dried fruit. This medium-bodied wine delivers a full mouthfeel that begs for a hearty, meaty dish to pair. The Craft: The fruit for this Pinot Noir grew among the Paragon Vineyards in Edna Valley, one of the first in the entire Central Coast to become certified in sustainable farming. The organic grapes were hand harvested in 24 ton loads and then fermented in stainless steel tanks after having a 2 day cold soak. For the final step in creating this elegant Pinot, the juice was aged in 100% neutral French oak barrels before bottling.

Vineyard : Seven Hills Vineyard: Just ten miles south of Pepper Bridge Winery on the edge of the Walla Walla Valley Appellation, you'll find Seven Hills Vineyard. The original couple dozen acres of plantings date back to 1981. Now the vineyard boasts more than 235 acres of premium wine grapes. This premier vineyard is managed by Greg Giguiere and is the source of fruit for many of the fine wineries in the state and valley. Wine & Spirits Magazine profiled it in its Fall 2004 issue as one of the ten great vineyards of the world. The vineyard utilizes several trellising systems, including Vertical Shoot Positioning and Geneva Double Curtain, depending on varietal and vineyard location. With the Geneva Double Curtain system of trellising, dual cordon wires are extended four or more feet above the ground, and the vines drape over them like curtains.

Tasting Notes 
This wine is slightly less extracted than the 2009 Occam's Razor, but it still has a beautiful dark purple color. The intense bouquet offers scorched earth, mineral, incense, blueberry, black raspberry, grilled meats, and a hint of vanilla, lavender and sage. Full-bodied, intense, and complex on the palate, the decadent texture and cashmere-like tannins frame a beautiful array of flavors: black raspberry, blackberry, blueberry, truffle, scorched earth, bacon fat, espresso, dark chocolate, vanilla, and hints of sage and wild mint. The resonant, silky finish lingers for well over a minute, and the refreshing acidity beckons another sip. Properly cellared this wine will hit maturity in 7-8 years and will easily hold for another 10 years after that.
Vintage Notes 
Occam's Razor (named after a 14th century Francisan friar and logician) basically states that given all the things are equal, the simplest answer is usually the best answer. In science, Occam's Razor is used as a heuristic process to exclude extraneous or unprovable (or metaphysical) concepts in a proof - thus making the proof as simple as possible. As people trained in science and mathematics, we use Occam's Razor as one of the many guiding principles in our lives. The wine had a pre-fermentation maceration of 135 hours and was punched down by hand 3 times each day during macerations and fermentation. All individual wine components, including free run and press fractions, were kept separate until final blending. The oak profile is 25% new French oak (predominantly from Troncais and Alliers) and 75% neutral French oak. The wine achieved its sparkly brilliance from 3 judicious rackings, no fining agents were employed. The wine was very lightly filtered to capture any remaining lees. The alcohol is 14.9%, pH is 3.78, and the titratable acidity is 6.5 g/L. Harvest date: October 3, 2010.
